Do you notice and sound difference between softer and harder woods? Just curious.

Yep, the wood makes a difference !!!!

A very hard wood acts like a glass slide and so it sounds the string when moving between frets. Some players like this effect.

Personally, I like the noter wood a little on the soft side. I want the string 'killed' when I lift the noter to raise the string off the fret (but still with the noter in contact with the string) - that way I can get a much crisper sound and more separation between notes, particularly on faster tunes or those where I want clean jumps between spaced notes.

I am a beginner MD player and do not own any noters yet. Could you tell me the differences in the woods in your set of exotic noters? Hard, medium, soft??
